So I’m sitting in the kitchen thinking what can I do with tuna & cream cheese (dairy free, that is!)
Well of course, I thought maybe Pinterest night give inspiration. I didn’t find what I made there but I found cream cheese and tuna can go together. So I mixed it together, put it in a little wrap, the kind kind for potstickers. And tadaaa, it’s not too bad.

I had an opened pack and they only last a week after opening so Im getting creative with them. I love them. The edges get crispy and I love a little crispy. I think I fake myself into thinking its fried though I don’t like fried I think our brains sometimes “crave it”. It’s like Wendy’s fries, yumm but not so yumm at the same time.

Anyway here is what I did.

Preheat the oven to 350 and lightly spray a good size baking sheet.
I used a pizza pan.

I used two packets of tuba
Maybe 3 tables spoons of dairy free cream cheese (use as much or as little as you want to taste)
Mix it well!

Spoon the mixture onto the little wrap, just a small amount so it doesn’t seep out. I’d estimate around a tablespoon or a little less depending on the size of the wrap.
Fold the wrap in half & pinch the edges.
Lay the wraps on the pan
Spray a light drizzle on the tops
Bake for 10 minutes
Flip and back 8-10 minutes or until they are browned on both sides.


Next time I might had some seasons or such but this wasn’t a bad test run.

I was at the store and saw some coconut water & thought to myself, that stuff is so good for you. I just don’t care for the taste for some reason. You know what I’ll just mix it with lemon & water, be side everything taste better with lemons.
-just before– I saw frozen grape juice and thought eh I’m too cheap to spend 2.65 on this I think I’ll just make lemonade.

So I made lemon coconut water not sure on its outcome because I went purely off of just what I thought sounded good.

Here’s what I used

3/4 pitcher of water
1 carton of coconut water
Half a large lemon -squeezed into the waters-

Mix well
It’s actually really good & you get the goods from the coconut water without such a powerful taste. Just drink multiple glasses 😉

We blame it on the seasons, a holiday, the month or week.
But really that’s life.
We are always busy. Always chasing a child, cooking, studying, working, picking up dog crap, saying what you think others want to hear & so on that we loose track sometimes.
It’s not that one time is busy though some busier than the next but it’s about keeping track. Keeping track of every little thing we do & MAKING TIME to do it.
Can we make time? That’s be great. By keeping track we can make time.
I’ve been so off of my blog because “it’s been a busy summer.” No.
Yes I’ve been busy but not because of the summer but because that’s kinda my life.
I’m learning to keep track better to make more time. And here is the start if that…or restart.

Well as you know if you read here often, we don’t eat real dairy products BUT we still love things that normally have dairy in them!
Last night was potato soup.. In the crock pot even! You can totally do this on the stove I was just letting it simmer.

So here’s what you need if you want dairy free potato soup, oh and it’s lighter by the way.. Less calories! It’s relatively clean I’d say too.


  • A few lbs of potatoes, (I used around 6 or so good sized potatoes from the bag.)
  • A full box/carton of veggie broth
  • 3 cups of water
  • 2 tables spoons of butter, we use Olivio olive oil substitute
  • 3 brats leftover from the night before.
    *You could use a half pound of sausage or to make it vegetarian which I do often find some great veggie sausage.
  • A little salt & spices or seasons you like most.
    (I often put pepper in mine but after I dropped it in a pain if boiling pasta I no  longer have any and can never remember to buy more.)

Now this is totally easy.
Pour the broth, water & drop the butter  in the crockpot
Dice up the potatoes, drop them in
Add you spices you like, I used salt, adobo season mix & oregano and it came out tasty but you choose your favorites!
Cooking is all about your taste anyway, right?
Pop that baby on high & let it cook for 6 hours!

6 hours later…

When the potatoes are nice & soft scoop about a two cups of liquid out & set aside, next your going to make it creamy scoop your soup into your food processes or blender & make them nice and creamy, set them aside and do it another 3 or so times. If you want a chunkier soup then simply spend less. Toss those creamy potatoes back into your crock pot with the stuff you didn’t mix. I always leave around 1/3 not blended.


6 hours later…lets blend!

Now with the liquid on the side just add it in so your soup is the constancy you like. I add very little as we like a thicker soup.

Once you have your soup to the consistency that you enjoy most it is not ready for you to eat!
Scoop it on into a big bowl, grab some ciabatta bread  and enjoy!!
The best bread to pair with it my hubby and I decided on is ciabatta. It’s a perfect match made in food heaven.

I simply used Kroger store brand sauce.. I cheated, who doesn’t?

The zucchini is the important part. We don’t eat much meat and I’m always looking for new ideas to put a twist on the everyday kind of stuff.

Sauté the zucchini with about 1/4 of a small onion. Or more if you like, we don’t like a ton but if you do, go for the half or more.
Put it in the pan with a drizzle if olive oil, Italian seasoning, a dash of adobo all purpose seasoning and of course a splash of red wine vinegar.
Sautéed until the zucchini is nice and soft.
Serve on pasta.

It’s a nice, healthier spin on spaghetti.

That wouldn’t be anymore true than it was on Mother’s Day for me, my best friend and her family.
As I’m making breakfast for my little guy I get a txt around 8:00 in the morning saying “I’m having contractions, I’m at the hospital and they are going to try to stop them.” My first reaction was “What!!” …”Like, real contractions!?”
Obviously yes but she was only 32 weeks. I was stunned. I was climbing the stairs to change so I could leave for the 2 hour drive to her once my hubby got home from the gym just as I received a call from her fiance. She’s being sent to Columbus by Care Flight and I needed to meet her in 30 minutes. I was there, before the helicopter!! I was able to get back within 10 minutes even though they said originally it’d be an hour.

There was a large series of events.. the contractions slowed, her parents left, her fiance walked his parents to their car (both sets live 2 hours away) and then her contractions flared up and there we were, just her and I breathing.
After and hour I made the doctor come in and questioned them stopping it…they said this was normal. After 8 hours I asked the nurse how long stopping labor takes and as she struggled to not look at me she said well sometimes we just can’t stop it. Right there I knew he was coming within the next 24-48 hours.. well surprise to me he’d be here 6 hours later.
After the contractions calmed a slight bit I went home to get dinner and put my little guy to bed just in time to be called back. It was happening, she was finally dilating and he was indeed coming tonight!!

Once I got there I ran straight back and couldn’t go in (I tried twice). Within 3 hours of waiting he was here, I ran back to her room just in time to see him as they were taking him to be examined. He was precious and I will never forget that moment… looking at her mom saying, “She has a baby!”
He was an amazing 4lbs 11oz.

He’s doing fabulous and I love him more and more everyday and I cannot wait to hold him and kiss all over him!!

So I’ve sucked at posting the past few weeks but its ok because I’m back at it. I totally quit my reception job and now get to stay home a day with my little man… And go to the zoo, parks, pool, COSI, and wherever I want because we have two cars now! We didn’t before. Having two cars rocks. Really.
Anyway I’ve been hitting the gym like almost daily… Not daily. I mean some activities like the zoo are close enough. I mean you walk up & down hills, chasing a two year old for at least two hours so that counts.. It’s real work sometimes.
But today is pool day so I’m currently sweating my face off on the treadmill .. Yep typing and speed walking.. Speed walking & sweating. Wild.
I used to be really freaked out from the machines at the gym because I was like htf do these work? Other people’s gross sweatyness touches them and I just don’t know if I like that. Well now good with it & use most of it.
Now I’m freaked out from the people I see at the gym sometimes.
The first is who we (hubby & I…and maybe others) call Pauly D.
He wears high top bright/multi colored shoes in the gym & leaves in sneakers… its silly. He walks around like everyone is looking at him & has the tall hair like Pauly D BUT actually it’s often styled like Dane Cook in his depressed not as hot days. I think that’s because he 1. Can’t afford the amount of hair product that Pauly uses or 2. He’s a little lazier/not really a “Guido” (did I spell that right?) I’m not sure. Also I never really see him working out hard. Generally he goes to a machine, sits down, looks around, does ONE rep gets up gets a drink & moves on. It’s kinda weird. Oh yes, all while looking around at everyone & making people feel awkward for looking at him. Oh and he stretches a lot, after every single machine he does one rep one. He’s behind me now, I think he’s following me. I hope you get a kick out of this just as much as I do watching him.

God I stink.
